Zuppa pavese or zuppa alla Pavese is an Italian soup consisting of broth into which slices of stale bread and poached eggs are placed. It is generally served with grated Parmigiano Reggiano. Usually in Lombardy either Grana Padano or Granone Lodigiano are used.
