Yu xiang eggplant is a spicy, sweet, aromatic dish of stir-fried eggplant from the Sichuan region of China, which is sometimes translated as "Chinese eggplant with garlic sauce". Yuxiang is one of the key Sichuan flavor profiles, containing soy sauce, Chinkiang vinegar, sugar, dòubànjiàng spicy bean sauce, chili peppers, garlic, ginger, and onion.
