Silesian sauce is a French sauce made with brown stock, shallot, tarragon vinegar, white peppercorns, bay leaf, and parsley, thickened with egg yolks, and enriched with butter, capers, and cayenne. When the capers and parsley are omitted and lemon juice and horseradish are added, it becomes Victor Hugo sauce.
