Shrimp scampi is an Italian-American dish of scampi (or, frequently, any other small crustacean such as shrimp or prawn ) with garlic butter , white wine , and Parmesan served over pasta or rice , or with bread . While the term " scampi " is in fact the Italian name of a particular crustacean, it has mistakenly been taken as a preparation name by American chefs, leading to similarly prepared dishes such as chicken scampi , lobster scampi , and scallop scampi .
