Rendang is a dish of meat, usually beef, braised in coconut milk and spices, often including chili, ginger, galangal, lemongrass, garlic, shallot, and turmeric, until the liquid evaporates and the meat turns dark brown.
It is characteristic of the Minangkabau culture of Indonesia, and is served across the Malay Archipelago.
