Galangal is a spice made from the rhizome of several southeast Asian plants. It is common in Khmer, Thai, Lao, Vietnamese, and Indonesian cuisine.
All of the species called "galangal" are related to ginger, but they have individual taste and heat profiles. The flavor of galangal is sometimes described as "flowery", or like ginger, cardamom, or "peppery cinnamon".
