Poke (pronounced po-keh) is a Hawaiian dish of diced raw fish. In traditional Hawaiian cuisine it is garnished with salt, seaweed, and candlenut (kukui) meat. Beginning in the 2010s, the dish became increasingly popular in the mainland United States and worldwide, and is now often garnished with a wide variety of other ingredients, from hot sauce to avocados to pickled peppers and fresh fruit.
