Misal (मिसळ, Marathi "mixed") is a spicy, complex dish from the western Indian state of Maharashtra. It consists of a curry made from sprouted lentils or moth beans, topped with crunchy snacks called farsan or sev, chopped onions, fresh cilantro, and other sharp, flavorful ingredients. It is usually served with pav, an Indian bread roll, and is eaten as breakfast, a snack, or a mid-day meal. When it is served with pav it becomes misal pav.
The base of the dish, misal curry, is made with sprouted lentils, usually cooked with onions, tomatoes, ginger, garlic, and spices such as turmeric, mustard seed, cumin, coriander, and garam masala.
The farsan or sev layer is made with whatever the maker desires. These crunchy chickpea snacks are available throughout India and range from bland to hot and complex.
Some versions of misal, particularly Kohlapuri misal, include a spicy gravy known as kat that is poured over the dish.
