Filet mignon, or beef tenderloin, or fillet steak, or eye fillet, is a cut of beef from the long muscle that sits beneath the ribs, next to the backbone. It is the tenderest part of the beef, and is generally considered the most choice cut.
When tenderloin is cut into small slices, they are called medallions of beef or tournedos.
