Cabbage soup is a general term for a large family of soups based on various cabbages, or on sauerkraut and known under different names in national cuisines.
Varieties of cabbage soup
- Shchi is a characteristic soup of Russia. While commonly it is made of cabbages, dishes of the same name may be based on dock, spinach or nettle. The sauerkraut variant of cabbage soup is known to Russians as "sour shchi" ("кислые щи"), as opposed to fresh cabbage shchi.
- Kapuśniak, or kapustnica, is an eastern European sauerkraut soup, often enriched with pork or kielbasa.
- Skābu kāpostu zupa is a Latvian sauerkraut soup, made with sauerkraut, potatoes, carrots and groats.
- Swedish cabbage soup is usually made from white cabbage, which is browned before being boiled, and seasoned with generous amounts of allspice and sometimes served with boiled meatballs.
- Caldo verde is a Portuguese soup, made with various cultivars of cabbage, including couve-galega (collards).
