Brussels waffles are a style of waffle from Belgium. They were not actually invented in Brussels but were in fact invented in Ghent in the early 19th century. They were introduced to American audiences by Maurice Vermersch, who sold Brussels waffles under the name "Bel-Gem Waffles" at the New York World's Fair in 1968.
Brussels waffles are typically prepared with an egg white or yeast leavened batter; traditionally, they would use ale yeast left over from ale brewing. They are light and crispy, with large pockets, and typically with rectangular sides, in contrast to the irregular shape of Liège waffle.
