Arroz con gandules, also known as pigeon peas and rice, is a dish of rice , pigeon peas , and pork , seasoned with sofrito . It is Puerto Rico's national dish, and is a close relative of similar dishes across the Caribbean and Latin America, including rice and peas , gallo pinto , hoppin' john , pabellón criollo , and moro de guandules .
