Aemono is a Japanese dish of dressed vegetables and seafood, literally "dressed things." It is typically served before or after a meal, or as an accompaniment to a dish. Rarely, a larger aemono may be served as a main dish. The term can also refer to the dressing itself, which is usually a thicker, creamier blend of egg, tofu, and miso. Common aemono dressings include shira-ae, goma-ae, miso-ae, and kinome-ae.
