Atsuage is the Japanese term for thick slices of tofu fried briefly in very hot oil, so the center remains tender. Compare with abura-age , where are fried completely. Atsuage is served as a dish seasoned with ginger and soy sauce , or added to nimono , itamemono , aemono and o-den .
