Wagyu is the Japanese term for beef cattle. The term is used outside Japan to refer generally to Japanese cattle breeds, which are prized for their tenderness and marbling.
Inside Japan, beef is usually described according to the region in which it was pastured, giving rise to Kobe beef, Matsusaka beef, and Yonezawa beef.
