Viennoiserie is a term for all pastry based on puff pastry or yeast-leavened dough enriched with butter, eggs, and cream. Pastries based on laminated doughs are a central part of the Viennoiserie tradition.
Many of the techniques of viennoiserie were invented in Vienna, as the name suggests, in the early 19th century. While these pastries are now often associated with French baking, it was not until 1837 that the first "Vienna-style" bakery, the Boulangerie Viennoise, was opened in Paris.
