Sweetbread is the thymus and pancreas glands of a calf or lamb. The name is also used for other glands when consumed as food. Not to be confused with sweet breads, which are sweetened baked goods.
Note that Schweser is an archaic German term for sweetbreads; the modern term is kalbsmilch.
