Sohan (Farsi, "rasp") is a traditional Persian saffron brittle toffee made in Iran. It is made with sprouted wheat flour and flour, butter or vegetable oil, sugar and corn syrup, and may be enriched with egg yolks. It is usually generously scented with rose water, saffron, cardamom, and slivers of almond and pistachio.
It is historically associated with the city of Qom, to a degree that it is also known as "Sohan-e Qom" (Sohan of Qom").
While the saffron and rose water flavor is traditional, may other varieties of sohan are available, including honey, sesame, halwa, almond, gazi (Persian nougat), loghmeh ("bite-sized"), butter, and pashmaki ("cotton candy", a light, flaky version of sohan).
