Sea bream, also called gilt-head bream, and porgy are common names for the Sparidae fish family. Of these, the gilt-head bream (Sparus aurata) is the most prized for cooking.
In France, the gilt-head bream is called dorade, and in Spain it is dorada.

Conservation status

Farmed bream is now available and is a BEST CHOICE when the wastewater is recycled, and a GOOD ALTERNATIVE when it is not. Also, English Channel seabream caught with midwater trawls is a GOOD ALTERNATIVE. Other fisheries and techniques are ranked AVOID.
