Recado is a Yucatan-peninsula Spanish term for a spice-rich seasoning blend. The term now refers to spice blends used in Mexican, Guatemalan, and Salvadoran cuisine to season stews, tamales, marinades, and sauces. The most famous is recado rojo, but recado colorado and recado negro condiments are also used.
