Pulses are all legume crops harvested for their dry seeds, such as beans, peas, and lentils. This covers a very large range of crops which are cultivated worldwide and form the staple foods or many cuisines.
In common usage, pulse excludes legumes that are eaten fresh and green, such as green beans and green peas , as well as legumes that are cultivated for their oil.
