Piftie, also called răcitură, is a Romanian and Moldovan meat aspic dish, usually made with a pig's trotter, carrots, and other vegetables. The gelatin is extracted from the trotter by boiling, and the resulting broth poured over the meat and seasonings in bowls, which is then cooled to create the jelly. It is traditional to serve the dish at Epiphany.
