Merveilles is a sweet fried pastry made in the southwest part of France, especially during Mardi Gras, and in New Orleans. The lemon, rum, and orange blossom water-scented pastry dough is traditionally cut into diamonds, crescents, and triangles before being fried and sprinkled with powdered sugar.
