Kissel is an Northern and Eastern European fruit dish, made with sweetened berry juice or purée, which is often thickened with potato starch, cornstarch or arrowroot. It may be garnished with fresh or dried fruits, or fortified with red wine, and is sometimes served with a sweetened quark or cream. It can be served warm or cold.
Traditionally, "kissel" referred to a variety of thickened dishes, including grain, vegetable, and dairy dishes. Milk kissel is a creamy pudding (see budino), still served in Poland and Finland, where it is called maitokiisseli
