Jerk is a style of cooking native to Jamaica, in which meat is dry-rubbed or marinated with a spice mixture called Jamaican jerk spice.
This spice mixture typically includes allspice, Scotch Bonnet peppers, and may also include clove, cinnamon, nutmeg, thyme, garlic, ginger, brown sugar, and salt.
