Fukujinzuke is a Japanese pickle dish, made with seven vegetables salted and pickled in a mixture of mirin and soy sauce . Common vegetables include daikon , eggplant , lotus root , cucumber , udo , turnips , shiso buds, shirouri , and udo . It is a very common condiment served with Japanese curry .
