Fondant is a thick mixture of sugar, water, and optional stabilizers including gelatin or glycerine, used as a filling or coating for cakes, pastries, and other confections. In confectionery, fondant is further classified into poured fondant, which is liquid and can be used as a candy filling, and fondant icing, which is has a stiff consistency like clay, and is used to decorate cakes.
