Eggs Matelote is a dish of eggs poached in matelote sauce (red wine, onions, and garlic), served on toast, served with more sauce. As matelote is normally a seafood stew, there is some humor in the name of the dish.
Note possible confusion with meurette, which is a richer sauce with bacon and mushrooms.
