Meurette, or Meurette sauce, is a French sauce made with red wine, bacon, onions, shallots, and mushrooms.
It is used in oeufs en meurette (eggs in Meurette) as well as other regional Burgundian dishes.
Note possible confusion with matelote; in some regions "meurette" is another name for matelote fish stew. This leads to confusion with matelote sauce, which is a simpler red wine sauce, which is also used with eggs, as eggs Matelote.
