Calabaza is the Spanish word for pumpkin, but in English it refers to a specific variety, also called West Indian pumpkin or calabassa. It is called auyama in Colombia, the Dominican Republic and Venezuela; ayote in Central America; and zapallo in some countries of South America.
It is particularly widely used in the Dominican Republic and features in many dishes of Dominican Republic cuisine.
