Jamoncillo de pepita, sometimes also referred to as jamoncillo de semillas de calabaza, is a candy made in southern Mexico. Its primary ingredients are ground pumpkin (calabaza) seeds, sugar, and sometimes honey. This gives it a different texture and flavor than jamoncillo de leche, with distinct nutty notes.
It is prepared by toasting the seeds, then grinding them into a fine paste. The paste is mixed with sugar or honey and cooked until it reaches a thick consistency. The mixture is then shaped into small bars or disks and left to cool and set.
