Buridda is a seafood soup or stew in Italian cuisine from Liguria in northern Italy. It is typically made with seafood such as fish, clams, squid, or mussels, in a fish broth with tomato, onion, and garlic. Variants from Genoa sometimes include shrimp and octopus.
The American seafood stew called cioppino is a close relative of buridda. The Provençal fish stew, bourride, shares a name but is different in style, as it is typically based on olive oil and aioli rather than tomato and onion.
