Alioli is a sauce that is very common in Spanish cuisine, made with garlic that is mashed into olive oil with salt. It is nearly identical to the Provençal sauce, aïoli, though it has become common in Anglo-American cuisine to build aïoli with an egg-enriched base, similar to mayonnaise, while Spanish alioli is more commonly made without any egg.
