Yakitori is a Japanese style of grilled chicken. It is constructed with chicken leg and thigh meat, sometimes with gizzards, liver, and other organs, marinated in shoyu, sugar, and mirin, and then threaded onto small wooden skewers with vegetables and grilled over hot coals.
