The xkatik or xcatic chile (pronounced "sh-katik") is a type of güero chile native to the Yucatán Peninsula. It measures about 11 cm in length and 2–3 cm in maximum diameter. Its pungency ranges from spicy to very spicy.
It is often roasted to make rajas, or ground to prepare soups like frijol colado, sauces, pickles, and stews. Additionally, xcatik chile and garlic cream is quite popular. It is a common ingredient in cochinita pibil, pescado en tikinxic, or pavo en escabeche. Whole chiles are also used to make chiles rellenos. They are rarely found dried.
