Tragacanth, also called gum tragacanth, Shiraz gum, gum elect, or gum dragon, is a gum derived from the dried sap of a number of plants in the Astragalus genus. It is used in Indian cooking as goond kateera or gond katira, and in sugarcraft for fine floral detail work.
