Tournedos Marguery is a French dish of beef tournedos sautéed in butter, served on artichoke hearts filled with a salpicon of truffles in cream sauce, accompanied by morels fried in butter with cock's combs and chicken kidney, finished with a reduced pan sauce of port and cream.
