Tournedos Choron is a French dish of beef tournedos sautéed in butter and served on a fried slice of bread (croûton), garnished with artichoke hearts stewed in butter and fresh peas or asparagus tips, finished with Choron sauce and a pan sauce of white wine and veal gravy.
