Tilsit, or tilsiter is a semi-hard smear-ripened cheese, originally from the Emmental valley. At the time of the cheese's creation, this was part of the German province of East Prussia; it is now part of the Kalingrad oblast of Russia. It is now produced across eastern Europe.
