Smear ripening is a cheese-making technique in which a soft cheese is "smeared" (or more accurately brushed) with a culture of bacteria, yeasts, and molds during aging, in order to develop a flavorful rind. They are often marked by an orange or brown layer on the surface of the cheese with notably strong odors, which do not usually penetrate to the interior of the cheese.
