Tarte Bourdaloue, or simply Bourdalou, also tarte Amandine, is a French tart, made with sliced poached pears laid into a filling of frangipane or crème d'amandes in a pâte sablée crust.

Name origins

Named after the rue Bourdaloue in Paris, where the tart's inventor, Nicolas Bourgoin, had his shop.
