Stilton is a semi-soft English cow's milk cheese. It is also produced in a blue variant, called Blue Stilton.
Stilton is only produced in Darbyshire, Leicestershire, and Nottinghamshire, England.

How to serve Stilton

Stilton has complex aromas and a complex flavor, especially when it is aged. It pairs well with raw vegetables such as celery or cucumber, or with firm fruits such as apples, pears, and grapes. It works well in an after-dinner cheese plate, where it pairs with ruby or tawny port, or a sweet dessert wine like Madeira. It should not be served with herbed or spiced crackers, which would clash with its complexity.
