Shropshire Blue is a semi-firm blue English cow's milk cheese, with blue spotting on a deep orange base. While it is similar in style to the much older Blue Stilton, it was actually developed in Scotland in the 1970s. Despite its Scottish origin, it is now produced in Nottinghamshire and Leicestershire, in England's western Midlands.

How to serve Shropshire Blue

Shropshire Blue is an excellent addition to a cheese course, especially one served at the end of the meal. It pairs well with fruit, port, and sherry.
