Sōki soba (ソーキそば) is an Okinawan dish of pork spare ribs served with Okinawan soba, which is made with wheat flour instead of the buckwheat noodles encountered elsewhere in Japan. It is a regional specialty of Okinawa and considered one of the characteristic dishes of the prefecture.
