Soft caramel is a candy made of sugar, corn syrup, and a dairy product, typically milk, cream, or butter. Soft caramels are distinct from the confectionery ingredient "caramel", which refers simply to browned sugar; a soft caramel introduces non-crystallizing sugars, dairy solids and fats which make the resulting candy soft and pliable.
