Salade niçoise, or Nicoise Salad, is a composed salad that originated in the French city of Nice. It includes tomatoes, hard-boiled eggs, Nicoise olive, and anchovies or tuna, dressed with olive oil. Seasonal variations are common and might include tender raw green beans in the spring, or cooked green beans and potatoes in the summer. Red peppers, shallots, and marinated artichoke hearts are also common additions.
