Sablefish (Anoplopoma fimbria), called gindara in Japanese, is a deep-sea fish of the northern Pacific Ocean. It is often marketed as "black cod," "blue cod", or "butterfish", but it is not a cod. It is sometimes marketed as sable, especially when smoked.
Sablefish has high oil content, making it very flavorful. They are often called butterfish because of their melt-in-your-mouth, oil-rich meat; see butterfish for other species that share this market name.
Sablefish became popular thanks to Nobu Matsuhisa's popularization of
gindari saikyo yaki
, which was described in English as "black cod with miso".
