Ratafia biscuits are aromatic biscuits meant to be eaten with ratafia liqueur, or flavored with ratafia essence. They are also frequently flavored with sweet almonds, apricot kernels, and rosewater, matching the almond flavor of ratafia. Ratafia biscuits are used in a number of traditional British and Scottish trifles.
If ratafia biscuits cannot be found, amaretti cookies are a decent substitute.
