Pike, or northern pike in the United States, is a freshwater fish with a long body, large flat jaw, and numerous teeth. They are aggressive and fast predators. Their flesh is white and mild-tasting, which has led to a long tradition of dishes. In the northern Midwest of the United States, the pike species called Muskellunge, or, colloquially, "Muskie," is a prized target of anglers.
Small pike have many small bones which are difficult to remove from the filet. To use smaller fish, many recipes based on pike forcemeat have been developed, include pike quenelles and mousses.
