Persillade is chopped parsley, sometimes mixed with chopped garlic, oil, vinegar, and herbs added to a dish at the end of cooking. It sometimes also applies to a dish that is fried in oil or butter and sprinkled with persillade. It is used extensively in French, Cajun, Louisiana Creole and Quebecois cuisine.
